Cauliflower and Spinach "Risotto"

I have not use this blog in X amount of time -- but I had a few people ask for recipes lately so I'm going to put this thing back in to use! Here's the first recipe for Cauliflower and Spinach "risotto".

Ingredients:
One bag cauliflower florets
One bag frozen spinach (thawed)
One yellow onion
4 cloves of garlic
Half and half
Butter
Parmesan cheese
Olive oil
Broth
Two chicken breasts
Salt/pepper/herbs

1. Dice onion and chop/smash garlic. Add to skillet with olive oil and cook on low heat. After five minutes, add raw chicken breasts (seasoned) and continue to cook on low.
2. Add a few spoonfuls of broth as needed when pan becomes dry or is browning. Stir.
3. Lightly chop cauliflower in food processor to resemble large grain rice.
4. Squeeze some of the excess water from thawed spinach
5. Once chicken is cooked remove from pan and set aside.
6. Add cauliflower and spinach to pan with cream, butter, Parmesan cheese
7. Cook down for about 7-8 minute
8. Serve topped with chicken and extra Parmesan cheese



I don't usually measure when I cook -- so as for the butter, cream and cheese -- start very lightly and add more to taste! A little goes a long way!

The summer showers seem to be non-stop lately.... My favorite is when I am able to cuddle up to the sound of the rain.... But most of the time I have to prepare for the weather and get my azzz to work.

Call Me Cupcake


I found this swedish blog on some of the most divine looking desserts I've seen and thankfully she has an english translation! Her food photography is on point too.

While on vacation recently, I had a homemade Espresso Brownie and it was one of the best desserts I have ever had! Here is a recipe for Chocolate Espresso Cupcakes (from here) that I can't wait to try!

Lucky finds!

I have been on a search for four particuliar shoes for MONTHS to fill the void of some shoes that I already own/owned but are/have bit the dust, and some I came across on Pinterest but were no longer instock on the linked site.... BUT within the past few days I have found four look-alikes! It feels like crazy luck, especially since they are so inexpensive its ridiculous.
